I found this recipe during my second Whole30 from . A ton of whole30ers raved about Terry’s marinated onions so duh I had to try them. These marinated onions are a great addition to practically any recipe, but the ones that stand out to me are buffalo chicken stuffed spuds, pulled pork sandwiches, or any salad ever made! We are having them tonight with steak, sweet potatoes, and salad; they are such a good savory condiment to add to your meal. Ok on to the recipe…
Ingredients:
- Small to medium red onion
- 3/4 cup olive oil
- 1 tbsp dried oregano
- 1 tbsp red wine vinegar
Yep that’s it!
Directions:
- Thinly slice the onion into strips and place into a low small/medium bowl
- Mix the olive oil, oregano, and red wine vinegar in a small bowl
- Pour mixture over onions making sure they are submerged in the mixture

- Let sit out at room temperature for at least 1 hour
- Onions will be good for 2 days left out in room temperature (if you put them in the fridge the oil will solidify)
